Restrict access to Gmail or another core service

Problem

How can you allow all services with the exception of Gmail to users?

Environment

Admin console

Solution

Create a new Organization Unit in the Admin console.
Go to Apps and then Google Workspace.
Click on the OU you just created or the one you will move the users to.
Click under Service status and change Gmail or the service you need.
Now click on Service status and select OFF.
Select Save.
Finally, move the users to the designated OU by going to each user's profile and select Change organizational unit.
